Cannelloni filling and cream sauce

From Fanny Farmer, torn out and put in binder  (directions to crepes on sep. page)

Filling: onion, olive oil, garlic, 1 lb gr. beef, 2 Tbsp cream, 1 tsp oregano, 2 eggs, 1.5 lb fresh spinach OR 10 oz frozen spinach, salt & pepper

Sauce 1: 6 Tbsp butter, 6 Tbsp flour, 1 c hot milk, 1 c heavy cream, 1/4 tsp nutmeg, salt & pepper

Sauce 2: Tomato sauce (on sep. page)
