Filling: 2 oz dark chocolate, 1 1/2 c heavy cream, 2 sheets leaf gelatin (2 1/2 tsp powdered), 3 eggs, 2/3 c sugar, pinch salt, 2 tbsp ginger, 2 Tbsp ginger syrup, etc, 1/4 tsp cream of tartar, 2 Tbsp sugar
