Chocolate chiffon pie

Cookie crust

Filling: 2 oz dark chocolate, 1 1/2 c heavy cream, 2 sheets leaf gelatin (2 1/2 tsp powdered), 3 eggs, 2/3 c sugar, pinch salt, 2 tbsp ginger, 2 Tbsp ginger syrup, etc, 1/4 tsp cream of tartar, 2 Tbsp sugar

Chocolate hazelnut cookies

2 1/4 c confectioner’s sugar, 1 1/2 c ground hazelnuts, 1 1/3 c ground almonds, pulp of 1/2 vanilla bean, 1 egg, 1 egg yolk, 5-6 oz dark chocolate, 1/8 tsp cloves, 4 oz cream

Raspberry tart with chocolate cream

Dough: 1 c flour, 1/4 c cocoa powder, 7 Tbsp unsalted butter, 1/4 c sugar, 1 egg yolk, 1/2 tsp vanilla

Filling: 1/2 c sugar, 1/2 c cornstarch, 2 eggs, 1 tsp vanilla, 2 c milk, 6 oz dark chocolate, 14 oz raspberries, confectioner’s sugar for dusting

Chocolate tart

In Pies, Sweet and Savory

Crust: 1 c flour, 7 tbsp butter, 1/4 c sugar, 1 egg yolk, 1/2 tsp vanilla (or 1 from store)

Filling: 11 Tbsp unsalted butter, 7 oz dark chocolate, 3 eggs, 2 Tbsp sugar (or more!), 1/2 c heavy cream

 

Note: the last time I made this it turned out TOO dark and bitter.  Will experiment with ingredient ratios
